Kenny's Apple Pie

Pastry dough for 9 inch pie, doubled and divided

6-7 medium granny smith or other tart apples, peeled and sliced

1 1/2 tablespoons lemon juice

3/4 cup brown sugar

1/2 cup granulated sugar

1/3 cup all-purpose flour

2 teaspoons Kenny's Holiday Pie Spice


Fit pastry into 9 inch deep-dish pie plate.

Combine apple slices and lemon juice in a large bowl. Combine remaining ingredients; add to apple mixture, and toss to coat. Spoon into prepared piecrust.

Prepare pastry dough for top; place over filling. Fold and crimp edges; cut slits in top for steam to escape. Loosely cover crimped edges with foil to prevent over browning.

Bake at 450 degrees for 15 minutes. Lower oven temperature to 350 and bake for 35 minutes.

Cool on wire rack.
